Our 2013 Cabernet Sauvignon is a brilliant carmine-red, fruit forward, wine from one of our warm growing seasons. Dark cherry, cloves and licorice are noticable on the palate. Aged for 26 months in French oak barrels and then bottle aged to achieve a well integrated wine with supple tannins. The grapes are grown on our hillside property 300 feet above the valley floor in Dry Creek Valley.
A big wine needs a big cheese and this Cabernet can use a companion like a well aged Gouda, minimum 18 months, or a blue cheese like Roquefort or medium blue like Bleu d’Auvergne.
